Revised 1949 recipe
From the revised edition of the Big Cookbook.

Tomato halves filled with minced ham and onion in cream, covered with pale aspic and served cold with celery salad. From Erken's Stor kokebok (1949), p. 494.
Source: Henriette Schønberg Erken, Stor kokebok, 1949-utg. s. 494 (falt i det fri)
The recipe carries the French name 'Tomates aux fines herbes', showing how strongly French cooking influenced Erken's cold dishes.
Prepare the tomatoes
Halve the tomatoes and scoop out the seeds with a spoon.
Make the filling
Put ham and onion through a mincer. Stir in paprika, salt and mustard to taste, and add quite a little stiffly whipped cream.
Fill the tomatoes
Pipe the filling into the lower tomato half and place the other half on top. Pour a little pale aspic over.
Serve
Serve the tomatoes ice-cold with celery salad in the centre, garnished with green lettuce leaves. The tomatoes can be topped with boiled egg white and olives.
The original gives no amounts for tomatoes, ham, onion or cream, so they are listed without figures. 'Sprøytes' is read as piping the filling with a piping bag.
