Gooseberry jam

Erken's gooseberry jam (1914): 1.5 kg berries are layered with 375 g sugar, boiled 15 minutes, and ½ dl cognac is added; the berries are lifted into jars and the juice is reduced 15 minutes and poured hot over them.

From "Preserving" in Erken's "Stor kokebok" (1914). The method of taking the berries out and reducing the juice gives whole berries in a thick syrup — a typical Erken technique.

How to make it

    Layer

    Layer the ripe, cleaned berries with the sugar in the preserving pan.

    Boil

    Let the berries boil for a quarter of an hour.

    Add cognac

    Pour the cognac over the berries.

    Take out the berries

    Lift the berries out with a slotted spoon and put them in jars.

    Reduce the juice

    Reduce the juice for a quarter of an hour and pour it hot over the berries. Cover.
