About the dish

A summer ice cream from the ice cream chapter in "Stor kokebok" (1914), made from unripe (green) gooseberries — the era's way of using thinned-out berries from the garden. The cream is split: half is stirred into the purée, the rest whipped stiff to give an airy texture.

How to make it

  1. 1

    Boil the berries

Boil the cleaned gooseberries until tender in 5 dl water.

  2. 2

    Strain

Press the berries through a fine sieve into a purée.

  3. 3

    Sugar syrup

Boil the sugar into a syrup with 1 dl water and the lemon juice. Skim the syrup.

  4. 4

    Mix

Mix the sugar syrup with the gooseberry purée and 5 dl cream. Let the mixture become completely cold.

  5. 5

    Whip and fold in

Whip the rest of the cream stiff and fold it in gently.

  6. 6

    Freeze

Freeze the ice cream (see the freezing method on p. 504). Stir a few times along the way if freezing without an ice cream maker.

Frequently asked questions

Why should the gooseberries be unripe?
Unripe, green gooseberries give more acidity and a fresher flavor that pairs well with the sweet sugar syrup and cream. The recipe uses 1 kg unripe berries boiled tender in ½ l water and pressed through a fine sieve.
How is the syrup made?
750 g sugar is boiled into a syrup with some water and the juice of 1 lemon. The syrup is skimmed before it is mixed with the gooseberry purée and ½ l cream.
How is the cream used — all at once?
No. Of 1 l cream, ½ l is stirred straight into the sweetened purée, while the rest is whipped stiff and folded in at the end before the mixture is frozen.
How long does the ice cream take?
Allow around 5 hours in total including boiling, cooling, and freezing. The recipe is intended for 8 servings and is taken from Henriette Schønberg Erken's "Stor kokebok" (1914), p. 509.
