About the dish

From the chapter on preserving in "Stor kokebok" (1914). This is a simple sugar-free preserving method in which the berries are sterilized in the bottle and only sweetened at the time of use.

How to make it

  1. 1

    Clean the berries

Pinch off stem and blossom end, rinse the berries, and dry them well.

  2. 2

    Fill the bottles

Fill the berries into wide-mouthed, completely dry bottles. Cork them well and seal the corks with wax.

  3. 3

    Boil the bottles

Wrap the bottles with hay (or cloths) so they do not knock against each other, set them in a pot of cold water, and boil for ½ hour.

  4. 4

    Cooling

Let the bottles stand in the pot until completely cold before removing them and storing them cool and dark.

  5. 5

    Use

When the berries are to be used, it is enough to stir them together with sugar — they do not need to be cooked.

Changes from the original

Modern measures and language in the steps. "Høi" (hay) is kept as protection between the bottles, but described with cloth/fabric as a modern alternative. Amounts are not given in the original.

Frequently asked questions

How do I prepare the gooseberries before filling them into bottles?
Remove the stem and blossom end (top), rinse the berries, and dry them well. They must be completely dry, and the bottles must also be dry. Use wide-mouthed bottles.
How long should the bottles boil?
The bottles are corked and sealed with wax, wrapped with hay, and set in a pot of cold water. Let them boil for half an hour, and let them stand in the pot until completely cold.
Do the berries need to be cooked when they are to be used?
No. After this preserving it is enough to stir the berries with sugar — they need no cooking.
Why are the bottles wrapped with hay?
The hay acts as protection around the bottles in the pot, so they do not knock against each other or the pot and crack during boiling.
