Revised 1949 recipe
From the revised edition of the Big Cookbook.

Cleaned, unripe gooseberries are put in clean, dry bottles, tapped down, covered with cooled boiled water and corked and sealed. Blackcurrants are treated the same way. From Erken's Stor kokebok (1949), p. 722.

One of the simplest ways of keeping berries, with no sugar and no heat.
Fill the bottles
Put the cleaned, unripe berries into clean, dry bottles.
Tap down
Settle the berries by tapping the bottom of the bottle.
Add water
Pour over cooled boiled water.
Cork and seal
Cork and seal the bottles. Blackcurrants are treated the same way. Note: Without heat treatment the berries keep only a short time. Keep cold and use soon.
The language is modernised. The original gives no amounts and none have been added. The last step adds a note on keeping time.
