Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Cleaned kid meat is soaked, rubbed with salt and cold butter, roasted in strong heat and basted with boiling water and cream; the pan juices are thickened with cream.

Kid meat was considered mild and easily digestible and therefore well suited to invalid fare.
Soak in water
Place the cleaned kid meat in cold water for a couple of hours. Dry it well.
Rub in
Rub the meat with salt and the cold butter.
Roast
Place the roast in a smoking hot oven (about 250 °C (480 °F)). Once the meat begins to brown, baste it with boiling water and cream. Baste with the pan juices during roasting.
The sauce
When the roast is tender, thicken the pan juices with cream and season with salt.
"Del." interpreted as deciliters, "smoking hot oven" given as about 250 °C (480 °F). Roasting time is estimated.
