A richer variant of the macaroni dishes in the entrée chapter. Cooking the dish in a water bath was common to get an even, moist texture without the cheese mixture drying out.
Cook the macaroni
Cook the macaroni tender in meat stock. Pour off the stock and cut the macaroni into pieces.
Mix
Mix the macaroni with the finely cut ham and the grated cheese. Stir in the egg yolks and finally fold in the stiffly beaten egg whites.
Make the sauce
Melt the butter, stir in the flour and thin with the milk into a smooth sauce. Pour it over the mixture and combine gently.
Cook in a water bath
Fill the mixture into a buttered dish, set the dish in a water bath and let it cook about 2 hours.
Serve
Serve with mushroom sauce or tomato sauce.
Modern units and Norwegian spelling, "freshly strained milk" translated to ordinary whole milk. The method is split into numbered steps; cooking in a water bath is described with an oven temperature as an alternative.
