Herring Pudding I: soaked salt herring in slices layered with boiled potato slices in a greased dish (potatoes at the bottom and top), covered with a mixture of flour, egg, milk, and pepper, baked half an hour in a hot oven and served with melted butter.

Herring pudding is one of the best-known Norwegian household dishes made with salt herring and potatoes, baked in a dish with an egg custard. Erken gives two variants; this is the layered one.
Soak and clean the herring
Place the herring in cold water overnight. Remove the skin and bones and cut the herring into slices or strips.
Layer in the dish
Grease a dish. Layer herring and slices of boiled potatoes, with potatoes at the bottom and top.
Mix the custard
Stir together flour, egg, milk, and pepper and pour the mixture over.
Bake
Bake the pudding in a hot oven (about 200 °C (390 °F)) for half an hour, until it is set and golden.
Serve
Serve the herring pudding with melted butter.
Unclear OCR quantities have been interpreted as ½ kg herring and ⅓ l milk. "Hot oven" is given as about 200 °C (390 °F). The method has been divided into steps and written in modern language.
