Salted beans were a common winter supply before the days of the freezer. Soaking overnight removes the salt so the beans can be used like fresh ones.
Soak
Place the beans in a colander and rinse them with cold water. Let them sit overnight in plenty of cold water.
Boil
Rinse the beans again, put them on to boil with cold water, and let them simmer until tender.
Serve
Drain off the water and stir in the melted butter and the finely chopped parsley.
Old measurements converted to grams and deciliters. Parsley is listed in the ingredient list, since it is mentioned in the method.
