Erken's red dessert sauce from 1914: fruit syrup and water brought to a boil and thickened with potato starch, sweetened to taste. Can be served with preserved berries.

The first of the dessert sauces in Erken's chapter. Red sauce made from household berry syrup was a standard accompaniment to puddings, mousses, and rice dishes.
Bring to a boil
Combine the syrup and 2 dl water, set over the heat, and bring to a boil.
Thicken the sauce
Stir the potato starch into 1½ dl cold water and whisk it into the boiling syrup.
Finish
Let the sauce come to a bare boil and take it off the heat immediately. Season with sugar to taste.
Serve
Preserved berries such as cherries or red currants can be served in the sauce.
