Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Rémoulade Sauce I from Erken 1914: egg yolks stirred thick with salt, then French mustard, anchovy essence, and tarragon vinegar are added, then oil drop by drop, and finally parsley and capers. For fish, poultry, and cold dishes.

The rémoulade sauce is a seasoned mayonnaise variant with mustard, capers, anchovy, and herbs. Erken serves it with cold dishes, fish, and poultry. "Nummer" refers to cold dishes/arrangements in the menu language of the time.
Stir the egg yolks
Stir the egg yolks with the salt until they are tough and thick.
Add seasonings and oil
Add the mustard, anchovy essence, and vinegar, then stir in the oil drop by drop.
Finish
Finally stir in the chopped parsley and capers. The sauce can be tinted green with spinach green.
Serve
Serve with cold arrangements, fish, and poultry.
"Del." interpreted as deciliters, anchovy essence kept (can be replaced with anchovy paste). Fractional quantities from the OCR normalized (¼ tsp French mustard, ⅛ tsp anchovy essence). The method has been modernized in language.
