The recipe is in the chapter on preserved vegetables in the 1949 edition and is brief: time and temperature are what matter.
Clean and parboil
Clean the leeks well and cut off the outer leaves and the roots. Parboil in water for 5 minutes.
Cool and fill
Cool the leeks and pack them into jars.
Sterilise
Sterilise at 100 °C (210 °F) for 40 minutes, then again at 100 °C (210 °F) for 15 minutes.
Note
Note: Leeks are low in acid, and heating at 100 °C (210 °F) is not enough to make them safe to keep. Today's advice is to freeze them or can them under pressure.
The text is arranged in steps. The quantity of leeks is not given and has not been added. A final note with today's advice on safe preserving has been added.
