About the dish

The recipe is in the chapter on root vegetables, greens and legumes, and builds directly on the preceding recipe for boiled green (dried) peas. The purée was used as an elegant garnish in tartlets alongside roast meat.

How to make it

  1. 1

    Soak the peas

Clean the peas and soak them in plenty of cold water overnight. Pour off the soaking water.

  2. 2

    Boil the peas tender

Put the peas on in 3 dl cold water and let them simmer until completely tender, about 2½–3 hours.

  3. 3

    Thin with stock

When the water has boiled down, thin with the beef stock little by little.

  4. 4

    Pass through

Press the boiled peas through a fine-mesh sieve or straining cloth and pour the purée back into the pot.

  5. 5

    Season

Warm gently, season with salt and pepper and stir in the cold diced butter until the purée is glossy and rich.

  6. 6

    Serve

Fill the purée into small tartlet shells or croustades and serve alongside roast meat.

Changes from the original

"del." is interpreted as deciliters and given in modern measures. The fine hair sieve is replaced with a fine-mesh sieve or straining cloth, and it is specified that dried peas must be soaked and boiled tender (2½–3 hours) as the preceding recipe indicates.

Frequently asked questions

What do I need for this purée?
3 parts green peas, 3 parts water, 2 parts beef stock, salt, pepper and 60 grams butter. The recipe is intended for 4 servings.
How do I make the purée?
The peas are boiled first in the water. When the water has boiled down, beef stock is added. The fully cooked peas are pressed through a fine sieve, returned to the pot, seasoned with salt and pepper, and finally the cold butter is stirred in.
How is the dish served?
Following Schønberg Erken's directions, the purée is served in small tartlets or croustades as an accompaniment to roast meat.
Why does it take so long?
The total time is around 3.5 hours because dried peas need long cooking (and soaking) before they are soft enough to be pressed through a sieve.
