Slice the potatoes
Cut the boiled, cold potatoes into thin slices. Arrange them on a dish or in a bowl, slightly higher in the middle.

Make the dressing
Mix the oil, vinegar, sugar, pepper, parsley, stock, chives and onion well. Pour the dressing over the potato slices.
