The book gives a basic pancake recipe and a cheese filling, and notes that they can just as well be filled with stewed vegetables, meat or fish, or with jam.
Make the batter
Mix flour and salt. Stir in one whisked egg at a time, beating well between each. Stir in the milk a little at a time.
Fry the pancakes
Heat the fat well and pour in the batter to a thin pancake. Turn it when it is nicely brown underneath. At the last moment add a little fresh fat and fry the pancake light golden brown. Practised cooks toss it in the air.
Make the cheese filling
Press the curd cheese through a fine sieve. Stir in the egg, sugar, vanilla sugar and raisins.
Fill
Fill the pancakes with the cheese filling. They can also be filled with stewed vegetables, meat or fish stew, or jam.
Note
Note: the cheese filling contains raw egg. Use a pasteurised or very fresh egg, and avoid serving to small children, pregnant women, the elderly and the ill.
The «¾ l» of milk for 100 g flour is kept as the original has it (the figure may be misread). «Pressesgjennemhårsikt» is read as pressing through a fine sieve. A «Note» step about raw egg is added.
