An uncooked rosehip jam that takes days but little work. The book does not give the amount of hips (x kg).
Prepare the hips
Wash the firm, ripe hips, dry them, halve them and remove the seeds.
Let them soften
Put the hips straight into a crock. Do not wash them now. Cover and keep warm for 4 days. Stir morning and evening.
Mix with sugar
When the hips are soft, add the sugar and stir or mix well. It does not matter if the sugar has not melted completely.
Jar and store
Put into jars, screw on the lids and place in a good cellar. Note: The jam is not cooked. Store cool, and keep opened jars in the refrigerator.
Measures are converted to modern units. The amount of hips is not given in the original (x kg) and has not been added. The last step adds storage advice.
