About the dish

Rich almond cakes baked in small molds, from the baking chapter of Stor kokebok (1914). To "wash" the butter means to knead it in cold water to remove the salt and buttermilk.

How to make it

    Prepare the almonds

    Blanch the almonds, peel them and grind them. Pound or process them with the powdered sugar until the paste becomes stiff.

    Work in the butter

    Work in the soft, unsalted butter one teaspoon at a time.

    Add the eggs

    Stir in the eggs one at a time.

    Mix in the potato starch

    Finally, stir in the sifted potato starch.

    Fill the molds

    Fill the batter into small greased and coated molds – only half full.

    Bake

    Bake the cakes light golden brown in a hot oven, about 190–200 °C (390 °F) for 12–15 minutes.

Changes from the original

The quantities have been kept; confectioners' sugar is retained as powdered sugar, "washed butter" is modernized to unsalted butter, and an oven temperature (about 190–200 °C (390 °F)) has been added. The almonds can be ground in a food processor instead of being pounded in a mortar.
