Original 1914 recipe

Erken's munker (1914): a yeast batter of 1 l milk, 75 g butter, 500 g wheat flour, 4 eggs, 30 g yeast, sugar, salt, and cardamom, proofed ½–1 hour and cooked in a greased aebleskiver pan with cooked apple or jam inside. Turned with a fork while the center is still runny; served warm with sugar or jam.

Munker — round, spherical yeast pastries cooked in an aebleskiver pan — belonged to Erken's dessert chapter, often filled with cooked apple or jam. The recipe uses fresh yeast and a thick batter that must proof before cooking.
Warm milk and butter
Warm the milk and butter together until the butter has melted.
Stir the batter
Sift the flour into a bowl and stir in half of the butter-milk mixture. Stir for 15 minutes and beat the batter well with a spatula. Stir in the salt, sugar, and eggs, one at a time.
Add yeast
Mix the yeast with a little sugar into ½ dl milk and blend with the rest of the milk. Add this and the rest of the butter to the batter together with the cardamom, and beat the batter well.
Proofing
Cover and let the batter proof for ½–1 hour.
Cook the munker
Set the aebleskiver pan over the heat, put a little butter in each well, and when the pan is hot, put a tablespoon of batter in each well. Add a small piece of cooked apple or a little jam once the munker have cooked for a moment.
Turn and finish
Turn the munker with a fork while they are still runny in the center, and cook them nicely golden brown on both sides.
Serving
Serve warm with sugar or jam.
Measures modernized (gr. → g, del. → dl, spiseske/teske → tablespoon/teaspoon, knivsod → pinch). Yeast is given as fresh yeast; the method is divided into numbered steps in modern Norwegian.
