About the dish

The book shows how to make pasta at home, with a simple egg dough, to use in place of bought macaroni.

How to make it

  1. 1

    Make the dough

Whisk the eggs lightly and work in enough flour to give a smooth dough that can be rolled out.

  2. 2

    Roll and dry

Roll the dough as thin as the back of a knife, and leave it to dry for about 1 hour, not too cold.

  3. 3

    Cut

Roll the dough up and cut it into fairly thin slices. Pull the slices out.

  4. 4

    Boil

Boil them in boiling salted water (1 tsp salt to 1 l water) for about 10 minutes, or until tender. Drain and mix in butter and grated cheese.
