Cream dressing for salad was common in Norwegian homes, where cream was more readily available than cooking oil. Erken gives two variants, with and without egg yolk.
Whip the cream
Whip the cream stiff together with the sugar.
Season
Gently stir the vinegar into the stiffly whipped cream.
Toss
Mix the dressing with the washed, well-dried and divided lettuce.
«2 del. fløte» is given as 2 dl heavy cream; measurements and language modernized in the steps.
