The book shows how to make pasta at home, with a simple egg dough, to use in place of bought macaroni.
Make the dough
Whisk the eggs lightly and work in enough flour to give a smooth dough that can be rolled out.
Roll and dry
Roll the dough as thin as the back of a knife, and leave it to dry for about 1 hour, not too cold.
Cut
Roll the dough up and cut it into fairly thin slices. Pull the slices out.
Boil
Boil them in boiling salted water (1 tsp salt to 1 l water) for about 10 minutes, or until tender. Drain and mix in butter and grated cheese.
"3 del." is read as 3 dl. The cooking water "1 teaspoon to 1 l" is read as 1 tsp salt per litre. "Not too cold" is read as room temperature.
