Revised 1949 recipe
From the revised edition of the Big Cookbook.

Stuffed onions are boiled Spanish onions filled with the scooped-out onion, mushrooms, tomato purée and forcemeat, baked golden in a hot oven and served with brown sauce. From Erken's Stor kokebok (1949), p. 434.

The book also suggests other fillings: risotto, tomatoes or spinach soufflé. Brown sauce served alongside completes the dish.
Boil the onions
Peel the onions and cut off the top quarter. Boil them in the boiling salted water until tender. Lay on a cloth and scoop out the middle with a teaspoon.
Make the filling
Chop the scooped-out onion finely. Simmer it in half the butter with the chopped mushrooms, tomato purée, pepper and parsley. Take off the heat after 5 minutes and let cool. Mix with the same weight of forcemeat.
Fill and bake
Fill the onions with the mixture. Lightly brown the rest of the butter in a casserole, add the onions and place in a hot oven for about 15 minutes, until nicely golden brown. Baste with butter.
Serve
Serve the onions with 1/4 l brown sauce. They can also be filled with risotto, tomatoes or spinach soufflé.
Measures are given in modern units. «Hot oven» is kept without a temperature since the text gives none.
