A short recipe from Erken (1914): flageolets, the green ripe seeds of the string bean, are boiled and served piping hot with asparagus butter.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 398 (falt i det fri)
Flageolets are the green, ripe seeds from the string bean. Erken treats them as a fine vegetable dish and serves them with asparagus butter, that is, melted or stirred butter of the same kind used for asparagus.
Boil the beans
Put the green, ripe bean seeds into boiling, salted water and boil them tender, covered.
Serve
Drain off the water and serve the beans piping hot with asparagus butter (melted or stirred butter).
Amounts and cooking time have been added as guidance, since the original does not give them. "Asparagus butter" has been kept and explained as melted/stirred butter.
