Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Erken 1914: mackerel is boiled in salted water, rests 1–2 days cold in its own strained stock and is served cold with horseradish sauce; the stock is thickened with 50 g butter and 50 g flour into a soup with boiled carrots, parsley and chives.

A typical household approach in Schønberg Erken's work: one boiling yields two meals. The boiled mackerel rests cold in its own stock for one to two days and is eaten with horseradish sauce, while the stock is used for a thickened soup with roots and fresh herbs.
Boil the fish
Clean and wash the mackerel, cut it up and place it in the boiling, salted water. Boil the fish until done.
Place the fish in the stock
Lift the fish out into a dish and strain the stock over it. Let it stand cold for 1–2 days.
Serve the fish cold
Take the fish out of the stock and serve it cold with horseradish sauce.
The soup
Stir butter and flour together, thin with the stock and boil the soup for 10 minutes.
Roots and herbs
Clean the carrots and boil them in 1/2 liter of the stock and 1/4 liter of water. Cut them up and add them to the soup together with chopped parsley and finely cut chives.
Measurements have been converted to modern units (del. → dl, tablespoon → tbsp). The amount of salt has been kept as in the original (1 dl salt to 2 liters of water is a strong brine – can be reduced to taste). The amount of carrots is estimated, as the original gives no weight. The fish should be kept cold in the refrigerator during the 1–2 days.
