How to make it

  1. 1

    Make the stuffing

Chop the suet finely and mix it with the parsley, grated bread, salt, pepper, lemon zest, grated nutmeg and milk.

  2. 2

    Stuff the rabbit

Wash the skinned, cleaned rabbit well in cold water and dry it. Fill it with the stuffing and sew it up.

  3. 3

    Roast

Spread a sheet of white paper with cold butter and wrap it around the rabbit. Place the rabbit in a roasting tin with butter or fat and put it in a hot oven (about 200 °C (390 °F)). Roast for 1–1½ hours, basting often with the pan juices and moving the paper aside now and then. Remove the paper a quarter of an hour before the rabbit is done, and sprinkle with a little salt.

  4. 4

    Serve

Serve with a brown, sharp sauce.
