Changes from the original

Measurements brought to modern units («del.» = deciliter). The amounts of currants and sugar are estimated, as the original does not give them. Sun-drying can be replaced with drying at room temperature or in an oven on the lowest heat.

Frequently asked questions

What does the dipping mixture consist of?
One part cold water mixed with two stiffly beaten egg whites. The currant sprigs are dipped in this mixture before being rolled in sugar.
Should the currants be picked off the sprigs?
No, the currants are candied on the sprigs. You dip sprig after sprig, let them drain a little, roll them in sugar and dry them whole.
How are the candied currants dried?
After the sugaring, the currant sprigs are dried in the sun. Set aside plenty of time – the stated time is about 5 hours – and use well-ripened currants.
How are they served?
They are arranged high on a footed stand (dish/compote stand), ideally as a confection or garnish for dessert. The recipe is from Henriette Schønberg Erken's «Stor kokebok» (1914), p. 632.
