How to make it

  1. 1

    Prepare the brains

Soak the brains well in water and wash them. Put them on in just enough cold water to cover and heat slowly. Remove from the heat at boiling point. Lift out the brains and remove the membranes and threads. Bring them to the boil once in boiling, salted water and cool in cold water.

  2. 2

    Simmer

Put the water, salt, peppercorns, peeled and sliced onion, bay leaf, vinegar and cleaned vegetables in an enamelled pot. Simmer the brains in this for 20 minutes, lift them out and let them cool.

  3. 3

    Bread and fry

Halve the brains, season with pepper and salt and turn them in beaten egg and then in breadcrumbs. Fry pale yellow in a pan in lightly browned butter.

  4. 4

    Serve

Serve with vegetables, fried parsley or fried tomatoes, and a brown, sharp sauce. Pigs' brains are prepared in the same way.
