About the dish

The book admits the dish calls for speed, and that the serving dish must withstand oven heat.

How to make it

  1. 1

    Make the base

Place a baked, cold sponge base on a dish that can withstand oven heat. Arrange cooked fruit around it.

  2. 2

    Add the ice cream

Put a thinner layer of fruit on top, slightly in from the edge, and the frozen ice cream over it.

  3. 3

    Whisk the meringue

Whisk the egg whites stiff, keep whisking for 15 minutes, add the sugar and spread it over the ice cake 5–8 minutes before it is to be served.

  4. 4

    Bake briefly

Leave the cake for 3–5 minutes in a really hot oven and serve it immediately.

  5. 5

    Note

Note: the egg whites are heated only briefly. Take care when serving to small children, pregnant women, older people and the ill.

Changes from the original

The original does not give quantities for the sponge cake, fruit and ice cream, and none have been added. «6–8 egg whites» is set to 7. «Really hot oven» is kept without a temperature.
