Rich white sauce (béchamel) from Erken 1914 where veal and onion are browned in butter, thinned with milk, strained and finished with cream, lemon juice and cold butter.

About the dish

Erken's second variant of white sauce is a richer béchamel, where a little veal and onion are browned in the butter to give the sauce depth. It was used for veal, poultry and vegetable dishes.

How to make it

    Brown meat and onion

    Cut the veal into small pieces and brown it in the butter together with the chopped onion.

    Add flour

    Stir in the flour and let it cool slightly.

    Thin with milk

    Thin with the boiling milk, add the seasonings and let the sauce simmer a quarter of an hour.

    Strain

    Strain the sauce and return it to the pot.

    Cream

    Thin little by little with the cream, bringing the sauce to a boil between each addition.

    Finishing

    Season with lemon juice and stir in 1 tsp cold butter just before serving.

'del.' is interpreted as deciliters, measurements given in grams and deciliters. The method is rewritten in modern Norwegian and divided into steps; the teaspoon of cold butter at the end is listed as a separate ingredient.
