Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

A chicken forcemeat of 250 g raw chicken and a cold panada (30 g flour, 30 g butter, 4 tbsp chicken stock, 1 egg) is lined into small oblong molds around a salpicon of veal sweetbread, tongue, mushroom and truffle in white sauce. Poached in a water bath in the oven 25–30 min, cooled, breaded in egg and rusk crumbs, deep-fried light golden and served with truffle sauce or ravigote sauce.

An elaborate dish from the poultry and game chapter: chicken forcemeat is shaped in small oblong molds around a fine salpicon, poached, breaded and deep-fried into sausage form, and served with truffle sauce or ravigote sauce.
Cook the panada
Stir together butter and flour, thin with the chicken stock and cook to a firm, smooth dough. Spread the dough on a plate and let it become completely cold.
Make the forcemeat
Scrape the chicken meat and pound it completely smooth in a mortar. Stir in the cold dough little by little, then the beaten egg and seasoning to taste. Press the forcemeat through a fine-mesh sieve.
Make the salpicon
Blanch the veal sweetbread and cook it in stock. Cut the sweetbread, tongue, mushroom and truffle into small dice and mix with the thick white sauce. Season to taste.
Fill the molds
Grease small oblong molds well with clarified butter. Line them with a thick layer of forcemeat, fill the center with salpicon and cover with forcemeat. Smooth the surface with a knife dipped in warm water.
Poach
Place the molds in a sauté pan, pour boiling water halfway up the sides of the molds, cover with greased paper and cook in a not-too-hot oven (about 160–170 °C (340 °F)) for 25–30 minutes.
Bread and deep-fry
Carefully turn the sausages out of the molds and let them become completely cold. Turn them in egg and rusk crumbs and deep-fry them light golden in hot fat.
Serve
Arrange on a folded napkin or paper napkin and serve with truffle sauce or warm ravigote sauce.
Measurements are converted to modern units, the "lard pot" is given as deep-frying (neutral oil or lard), and the oven temperature is specified (about 160–170 °C (340 °F)). The hair sieve has been replaced with a fine-mesh sieve, and the mortar can be replaced by a food processor.
