In the 1949 edition fruit porridge is a basic recipe that can be made from any kind of fruit. The book only states how much thickener is needed per litre of juice.
Sweeten the juice
Use juice from any fruit you like. Sweeten it to taste and bring it to the boil.
Thicken
For 1 litre of juice use 60 g sago flour, 60 g rice flour or 75 g potato flour. Whisk the flour smooth and whisk it into the boiling juice or fruit. With sago grains, boil 125 g grains in 1.25 litres of water together with about 5 dl juice.
Boil and pour
Let the porridge boil for a couple of minutes after the thickener is whisked in. Pour it into a dish or bowls at once.
Prevent a skin
Sprinkle a little cold water over the porridge or dust it with sugar so that no skin forms on top.
Old measures (gr., l.) are written as g and l. Sago grains are listed as a separate ingredient and the method is split into four steps.
