A simple preserving method without heating. The book stresses that all the stalks must be covered by water, or they go mouldy or change colour.
Cut the stalks
Cut the peeled stalks into 3 cm lengths and split them lengthways into 2–4 parts depending on thickness.
Fill the bottles
Put the stalks in bottles and pour over fresh, cold water. Hard water should be boiled and cooled completely first.
Cork loosely
Cork the bottles for now only with a plug of cotton wool, because the stalks absorb some of the water.
Top up and seal
The next day add more water, then cork and seal the bottles. Stalks not covered by water easily go mouldy or change colour. Store the bottles in the dark, or wrap them if the cellar is too light. Note: This method without heat treatment gives a short shelf life. Keep cold and use soon.
Measures are converted to modern units, and lakses is read as lakkes (sealed with lacquer). The kind of stalk is not stated in the text. The last step adds a note on keeping time.
