Make the potato dough
Stir the egg yolk, 15 g melted butter and 2–3 tbsp milk into the riced potatoes. Salt to taste. Put half of the potato dough on a flat dish and press it down slightly in the middle. Mark the edge with a fork dipped in flour. Roll the rest of the dough into small, round balls and set them close together on top of the potato border around the dish.
Make the sauce
Put the flour in a pot and whisk it smooth with the cream and fish stock a little at a time. Add the cold butter in small pieces, put over the heat and bring to the boil, whisking constantly. Season with salt and pepper to taste.
Layer
Lay the flaked fish in layers with the sauce on the potato border.
Bake
Brush the potato balls and the border with egg. Sprinkle with crushed rusk crumbs and drizzle with quite a little melted butter. Put the dish in the oven over a bain-marie for 10 minutes, or until the potatoes are light brown. Stick a couple of parsley leaves in the middle of the dish when serving.
