About the dish

This is the first of two mutton ragouts in the book, a simple everyday dish with rice.

How to make it

  1. 1

    Brown meat and vegetables

Cut the meat into smaller pieces. Clean the vegetables and cut them into small pieces. Brown the meat and the vegetables nicely, each separately, in butter.

  2. 2

    Cook

Cook the meat under a lid for ½ hour, add the vegetables and cook until everything is tender, about 1 hour more.

  3. 3

    Cook the rice

Scald the rice and boil it in the water until tender. Drain off the water.

  4. 4

    Serve

Put the meat in the middle of the dish and the rice and vegetables alternately around it. Pour the sauce over.

Changes from the original

The text is damaged by character recognition; quantities are read as ½ kg meat, ½ l water, 1 small onion, 1 dl rice and about 1 hour cooking time. «Drain off the water» is kept. «Cook under a lid» applies to the whole cooking time.
