Apples "in a dressing gown" are apples wrapped in pastry; here they are in the invalid-cookery chapter, with unsalted butter.
Prepare the apples
Wash the apples but do not peel them. Push out the core and fill with almond paste instead.
Make the pastry
Work flour, unsalted butter, egg yolk and grated lemon zest together quickly and roll out the pastry.
Wrap
Lay the pastry around the apples.
Brush and bake
Brush with egg and bake in the oven until the pastry is golden.
Oven temperature and baking time are not in the text and have not been interpreted. The amount of almond paste is not given. The whole recipe is given for 1–2 apples.
