The sugar test "the small crack" (the soft-crack stage): the sugar sticks to the finger and teeth but breaks with a light sound.

The "crack" stages are used for hard caramel, drops, and spun sugar. Erken distinguishes between the small and large crack by only a few seconds of boiling between them — so one must watch closely.
Boil a few seconds more
Boil the sugar a few seconds longer than to the large ball.
Take the test
Dip your index finger in the sugar.
Judge the sugar
If the sugar sticks to the finger but breaks with a light sound, or sticks to the teeth, the sugar has boiled to the small crack.
