About the dish

A simple brown base sauce from the sauce chapter of "Stor kokebok" (1914), made from a roux and pan juices from the roast. Erken places it among the brown sauces alongside the more elaborate sauce espagnole.

How to make it

  1. 1

    Brown the roux

Melt the butter in a pot, stir in the flour and let the roux brown slowly over low heat, or place the pot in a moderately hot oven until it is nicely brown.

  2. 2

    Thin with pan juices

Gradually thin with the pan juices while stirring, once the roux is nicely brown.

  3. 3

    Bring to a boil

Let the sauce cook for 5 minutes.

  4. 4

    Cream and seasoning

Stir in the cream if desired, and season to taste with salt and pepper.

Frequently asked questions

How do I get the sauce nicely brown?
Melt the butter, stir in the wheat flour and let the roux brown slowly over low heat or in a moderately hot oven. Only when the roux is nicely brown do you thin it with the meat pan juices - that way you avoid the flour becoming burnt and bitter.
How long should the sauce cook?
After the pan juices are added, the sauce should cook for 5 minutes. The total working time is about 20 minutes.
Do I have to add cream to the sauce?
No. The recipe calls for 1 deciliter of heavy cream, but Schonberg Erken writes that the cream is added or not, depending on what one prefers. The sauce is seasoned with salt and pepper to taste.
Where does the recipe come from?
It is taken from Henriette Schonberg Erken's "Stor kokebok" from 1914, page 334, and is intended for 6 portions.
