Stir the yeast
Stir the yeast with the sugar to a thin paste. Add the lukewarm milk.
Make the dough
Sift the flour. Stir in the yeast and milk, the melted butter, the beaten egg and the egg yolks, and the salt. Beat the dough until it leaves the bowl.
Cut out and fill
Roll out the dough, not too thin, about the thickness of the back of a thick knife. Cut out rounds with a beer glass. Put them together in pairs with a little jam in between, and press the edges together.
Prove
Place the buns on a floured tray and let them rise for about 20 minutes to half an hour.
Fry in lard
Lift the buns off the tray one by one with a wide, floured knife. Fry them in lard over not too strong a heat until they are nicely brown and risen. Place them on paper so that the lard drains away, and sprinkle with sugar.
The lard
The lard is ready to use when it just begins to give off a little steam.
