Revised 1949 recipe
From the revised edition of the Big Cookbook.

The book has two different banana salads on neighbouring pages; they are combined here because the drafts in the source are linked to the same title.
Cut and drench
Cut the bananas into strips, the eggs into slices, and the potatoes and apples into cubes. Drench potato, apple and banana with the lemon juice.
Make dressing
Mix vinegar, mustard, oil, salt and pepper. Stir in the hot water and pour the dressing over the banana, potato and apple.
Arrange
Pile the salad high in a salad bowl with the egg slices tucked between. Put small lettuce leaves around and sprinkle chopped capers, parsley or cress over.
Variation
A simpler variation from p. 470: cut bananas into slices or cubes and layer them with finely cut pineapple. Pour mayonnaise over and sprinkle with coarsely chopped walnuts.
Note
Note: If the mayonnaise is made with raw egg yolks, use fresh eggs and serve the salad promptly.
Quantities are kept. The two banana salads are combined as a main recipe and a variation. «1–2 apples» is set to 2 with the range in the note.
