About the dish

Bananas in savoury dishes were unusual for many; the book includes them as a filling in an omelette.

How to make it

  1. 1

    Fry the bananas

Lightly brown the butter and fry the banana slices for a few minutes. Season with pepper and salt.

  2. 2

    Make batter

Whisk the eggs, cream, salt and pepper together.

  3. 3

    Cook the omelette

Melt the other 30 g butter in the pan, pour in the batter and stir gently with a fork. Cook over high heat. When the batter begins to set, shake the pan gently so the omelette starts to form.

  4. 4

    Fill and serve

Place the fried banana slices with their butter in the middle. Fold one edge over and serve at once on a warm dish.

Changes from the original

Quantities are unchanged. The eggs and cream are whisked together because of the word «røren» (the batter). The method is split into four steps.
