About the dish

From the potato section in the chapter on root vegetables and greens. On the same page, Erken reminds the reader that "a poorly boiled potato completely ruins an otherwise well-prepared meal," and creamed potatoes were a common way to use up boiled potatoes from the day before.

How to make it

  1. 1

    Make a white sauce

Melt the butter in a pot, stir in the flour, and thin with the milk a little at a time. Bring to a boil, stirring.

  2. 2

    Add the potatoes

Cut the boiled, cold potatoes into neat slices or cubes and put them into the sauce. Salt to taste.

  3. 3

    Boil and serve

Bring the mixture back to a boil, sprinkle over the finely chopped parsley, and serve.

Changes from the original

Measures are converted to modern units (dl, tbsp, tsp), and the amount of potatoes is estimated at about 800 g boiled potatoes since the original gives no quantity. The method is divided into numbered steps.

Frequently asked questions

Can I use freshly boiled potatoes?
The recipe is made for boiled, cold potatoes. Cold potatoes hold their shape better when cut into neat slices or cubes and heated in the sauce. Feel free to use leftovers from the day before.
How do I make the sauce?
Melt 50 g butter, stir in 35 g wheat flour, and thin with ½–¾ liter milk. Bring to a boil, add the potatoes, salt to taste, and bring back to a boil. Sprinkle over 1 tablespoon finely chopped parsley before serving.
How much milk should I use?
Between ½ and ¾ liter. Use less milk if you want a thicker dish, more if you want it looser – the potatoes also absorb some liquid.
Where does the recipe come from?
From Henriette Schønberg Erken's "Stor kokebok" (1914), page 356. It is for 4 servings and takes about 20 minutes when the potatoes are already boiled.
