From the revised edition of the Big Cookbook.

The dish belongs to the cold-table chapter and shows how game roasts were served cold with salad and decorated aspic.
Make the salad
Cut the cooked macaroni up and mix with cleaned anchovies cut in fillets. Shake the oil, lemon juice, stock, salt and a very little sugar well together and pour over.
Arrange the fillet
Lay the sliced elk fillet on a platter and surround it with the salad. The salad can be served in celery baskets.
Garnish with aspic
Cut the firm aspic with a root-vegetable cutter and lay the pieces up on the back. Garnish with tomato. The small baskets can also be filled with peas and spinach.
Quantities are given only for the dressing; the rest are listed without numbers. "Rotkniv" is kept, and what "the back" refers to is unclear in the text. The salad dressing is moved to the first step.
