About the dish

The simplest of Erken's raspberry cordials: the berries are brought to a boil with a little water, and the juice is strained and boiled down with sugar. Sealing the cork with wax was a common method of preservation before canning jars became widespread.

Frequently asked questions

How much sugar should I use?
Measure the juice the day after straining, and allow 1/2 kg sugar per liter of juice. The amount of water used to boil the berries is only 1/4 liter.
Why does the recipe take more than a day?
The berries are brought to a boil with water and strained, but the juice must stand until the next day before it is measured and boiled with sugar. The sugar boiling itself takes only 1/2 hour.
How is the cordial stored?
Skim well during boiling, pour the cordial hot into bottles, cork them, and seal the corks with wax – that is how the cordial was kept airtight and shelf-stable in 1914.
