About the dish

The counterpart to lemon cream ice. Carmine was a common red food color in the 1914 kitchen and is used here together with saffron to give the ice an orange color.

How to make it

  1. 1

    Orange sugar

Rub the sugar against the orange peel until the yellow is gone, or grate the peel finely and mix it with the sugar.

  2. 2

    Juice

Pour over 1 tbsp hot water and add the strained orange juice. Let the mixture become completely cold.

  3. 3

    Mix and freeze

Stir the orange mixture into the cold ice cream, add a little saffron and carmine for color if desired, and freeze.

Changes from the original

Carmine and saffron are marked as optional color; the peel can be grated finely instead of being rubbed with a sugar cube. The freezing is described for an ice-cream machine or freezer.

Frequently asked questions

How do I get the orange flavor into the ice?
Rub the orange peel off with the sugar cube (rub the sugar against the peel), pour over 1 tablespoon hot water and add the strained orange juice from 3 oranges. Cool the mixture completely before it is stirred into the ice cream, otherwise the cream will curdle.
What are saffron and carmine used for here?
For color only — a trace of saffron and a little carmine give the ice a golden orange color. They can safely be left out without changing the flavor.
What is the base of the recipe?
3/4 liter ice cream (cream ice) from the base recipe on page 506 of Stor kokebok (1914). The finished mixture is frozen, and the stated total time is around 200 minutes for 4 servings.
